Ravioli- english version for my foreign friends

Follow the photos in the Hebrew recipe :)


ingredients: (for around 30 raviolis)
2 cups of white flour
2 eggs
2.5 tbs olive oil
0.5 tsp salt
some water to add if the dough is dry

1. Place the flour in a mound
2. Creating a well in the center and pour the rest of the ingredients into the well.
3. Slowly pull the flour into the eggs until it is all incorporated.
cover and put in the fridge for 1.5 hours
4. Divide in quarters and roll out each one until 0.5 cm thin
5. use a shot glass to create circles
6. roll each one until you can see through it
7. take 1 tsp of filling and put in the middle
I used: 100 gr Ricotta cheese, 1 baked sweet potato, salt, pepper and few walnuts
8. cover and close the 2 together
9. use a fork to decorate the ends
10. drop the ravioli into boiling water, they will float to the surface when ready, toss with your favorite sauce.
